WHere is an easy interpretation of a drink found on our latest menu. It's a batch pre-mixed that is packed with essence associated with festive period, which makes it ideal for your celebration. Any leftover syrup you can use for morning drinks, sweets, or for additional servings of the drink.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Combine the listed items inside a pan, bring to a gentle boil, mixing until the sugar dissolves. After that, remove from the stove allowing it to cool fully. Decant to a sealable bottle, seal keeping it in the fridge, it can be stored for around four weeks.
For the Cocktail Base: Mix all the liquid ingredients in a big jug, allow it to infuse for one hour, then filter it preferably using cheesecloth, making it completely strained.
To serve: Pour 85ml of the batch mix into a cocktail shaker packed with ice, gently stirring gently for a minute until cold. Pour into an frosted cocktail glass or a similar vessel, garnish with the cranberries and complete it using a quick spritz of mandarin oil over the drink.
